Prosciutto Wrapped Salmon Fillets

This is just about the simplest and tastiest way that I've ever cooked salmon.  I usually bake it in the oven, but it works just as well on the BBQ too.










Prosciutto wrapped Salmon
2 servings

2 salmon fillets (1.5 to 2 inch in thickness)
4 slices of prosciutto ham
2 tsp olive oil
salt and pepper
  • preheat oven to 400 F.
  • wrap each salmon fillet with two slices of prosciutto, covering as much of the salmon as possible, and place in a deep casserole dish.
  • pour the olive oil evenly over the wrapped fillets, and season with a little salt and pepper.
  • bake the salmon in the middle of the oven for 20-25 mins, depending on size of fillets, until the prosciutto is slightly crispy around the edges.

 don't they look fabulous!!! - we bought 4 fillets while we had the chance and I've pre-wrapped the other 2 with prosciutto and frozen them to use another time.

you can either get the prosciutto cut to order from the deli or buy it (as I did) pre-packaged.

cover as much of the salmon as possible with the prosciutto.

I served the salmon with slow cooker roast potatoes and leftover watermelon and tomato salad from yesterday.
