Chocolate Oatmeal Chews

Goodness, sorry I haven't posted anything for a while, but what a week it's been!!!
My hubby has been home, so we've been able to get out and about doing last minute things before Christmas, which has meant more meals eaten out than in, and I also had a birthday in there (have a look at the 'blog' page to see where I was taken for a surprise :o).

Well it's now Christmas Eve, so I thought I would bake some cookies as our cookie jar is looking decidedly empty - we had a mixed tin of treats given to us by a friend the other day, but they are long gone!!!










Chocolate Oatmeal Chews
55-60 cookies

1 cup butter, softened
1 cup sugar
1 cup brown sugar, packed
1 tsp baking soda
1/2 tsp salt
2 large eggs
1 tsp vanilla extract
1 3/4 cups all-purpose flour
3 cups oats
1 1/2 cups semisweet chocolate chips

  • preheat the oven to 375 F.
  • in a large bowl of a stand mixer beat the butter on medium to high power for about 30 seconds until silken.
  • add both sugars, baking soda and salt; beat until combined, scraping the edges down occasionally.
  • beat in the eggs and vanilla until blended completely.
  • add the flour and mix until incorporated.
  • stir in the oats and chocolate chips either in the stand mixer or by hand.
  • drop heaped teaspoons of dough onto ungreased cookie sheets about 2 inches apart.
  • bake for 8-10 minutes or until golden brown.
  • let stand on the cookie sheets for 1 minute then transfer to wire racks to cool completely.

beat the butter until it's silky smooth.

add the sugars, baking soda and salt - don't forget to scrape down the edges!!

add the oats.

don't forget those yummy chocolate chips :o)

the dough started to get quite stiff so I finished mixing it by hand.

drop heaped teaspoons onto the ungreased cookie sheets - these spread quite a bit so make sure you leave plenty of room between each one (at least 2 inches).

let them cool for a minute on the sheets before transfering to wire racks.

how do you like our new cookie jar?  On sale at our local Canadian Tire, complete with various cookie cutters inside - I love it :o)
